Marinated scallop

Sliced scallop, flying fish roe (Tobiko caviar), cara cara orange, green apple, blood beet microgreens, potato crumbles


Scallop marinade: lemon juice, white pepper, salt, chopped parsley, marinate for 4hrs


beet microgreen salad: lightly dressed with olive oil and lemon juice, salt and pepper

Potato crumble: Idaho potato sliced 1/8 inch, salt, sandwich between two oiled sheets of parchment paper, flat weight above and under; bake 500C for 8min, cool in RT,  remove top weight bake again at 350 for 15min, until and golden and crispy
